Recipe: Magnolia Bakery Red Velvet Cupcakes

It's surreal to think that March marked 3 years since I was in New York.  It almost seems like a life time ago and so much has happened in my life since then.  So much has changed too, including me, my life and my circumstances.  I always use trips as check points, what has happened between one trip and the next?  The last trip and now?  Have I grown, have I stuck to my gym schedule, are the same people still in my life?

I'm really itching to go back.  New York is definitely one of my favourite places in the world.  The city is so diverse and each block has a completely different vibe and is like a new world.  New York is a million things and places in one.

Don't think many people visit New York without a stop at Magnolia Bakery, made famous by an episode or two of SATC, where the girls drown their sorrows in cake (haven't we all been guilty of that???).  The cupcakes really are as excellent as you'd hope.

We are hosting Australia's Biggest Morning Tea in the office next week (I hope you are too!) to raise funds for Cancer Council, so I wanted to do a trial batch of cupcakes and decided on the Red Velvet, using the Magnolia Bakery recipe.  I snuck out of work early and had a great night watching the voice and playing around with red food dye and measurements.  I am really happy with how they turned out and would recommend the recipe to anyone as it's fairly straight forward.  I did tweak the recipe slightly, so I am posting my own version which in my opinion makes the cake a bit more fluffy and moist.  The original recipe is freely available on the internet.

Red Velvet Cupcakes (recipe makes 24)

3 ¼ cups plain flour (sifted)
3/4 cup unsalted butter, at room temperature (I used Lupak butter which has a bit of vegetable oil added to it)
2 ½ cups sugar
3 large eggs
6 tbsp red food coloring (about 2 bottles of dye available at Australian supermarkets)
4 tablespoons unsweetened cocoa
1 1/2 teaspoon vanilla extract
1 1/2 teaspoon salt
1 1/2 cups buttermilk
3 teaspoon vinegar
3 teaspoon baking soda

Preheat oven (fan forced) to around 170C and line cupcake tray with papers.

1. Cream butter and sugar on medium speed until light and fluffy
2. Add eggs, one at a time and beat until creamy
3. Combine food colouring, cocoa and vanilla extract on a bowl and then add to batter
4. Add salt and buttermilk and combine on the lowest setting
5. Add the sifted flour, again mixing on the lowest setting
6. Combine vinegar and baking soda separately and add to batter and combine the mixture well on a low setting, without overbeating
7. Spoon into cupcake papers (fill to around half to 3/4 full) and bake for 20-23 minutes
8. Cool cupcakes in the baking tray for around half an hour




The cream cheese frosting is honestly the ultimate.  You will never frost your cupcakes with anything else once you've tried this!

500g cream cheese
3/4 cup of butter, softened
2 teaspoon vanilla extract
1 1/2 cups icing sugar, sifted (you will find that this is much less sugar than the original recipe, but it's honestly not necessary to use any more sugar)

1. Beat cream cheese and butter until smooth
2. Add sugar and vanilla extract and beat on high until light, fluffy and consistent
3. Fill a piping bag and generously spread over the cupcakes.

New York memories... Part I

1 year ago exactly B and I were on our way to NYC.

I had wanted to go to NYC since I could remember.  I'd been to the US a few times before but never went to go to NYC as I was a poor student and I knew I couldn't enjoy it as much as I wanted to.. shopping, fancy restaurants and bars etc.

The decision was made spur of the moment too.  Qantas had 2 for 1 international airfares, so I emailed  B while we were both at work and the conversation went like this:

Me: Honey, can we pleaseeeeeeeee go to NYC??
Him: Yeah I'm sure we'll get there
Me: Can we go soon??
Him:  How soon?
Me: How about April/March
Him: lol
Me:  Qantas has a 2 for 1 sale, pleaseeeeeee
Him: Ah alright

So I booked it while we were both at work, we didn't even speak about it in person!  Spontaneous much??

We did a few days in Vegas & LA on the way home cos B had never been.  I'd been to both previously and wasn't really a fan of either.


We stayed in Chelsea.  All the attractions are so spread out that no matter where you stay you will have to travel to see everything, so stay wherever you want!

A bagel from Murray's Bagels EVERY SINGLE MORNING for 10 days! More scream cheese than bagel, but SO good!



Visiting Times Square for the first time on a Saturday night.  You have to do it once in a life time, words do not do it justice.



Spotting The Naked Cowbow at Times Square within 5 minutes and having a photo with him (that's not me above in the photo btw!)!  We passed through many more times but didn't see him.  So glad B spotted him on our first night.





Having cocktails and dinner at Tao - made complete by their famous Fortune Cookie mousse as dessert.  It's seriously HUGE one side milk and the other white chocolate mousse.  I still dream about it!  I made our booking about 5 weeks before we left, but it's definitely worth it.

Magnolia Bakery.  We went in mid March and it was great as there was no lines for anything.. not for cupcakes, or Top of the Rocks... rock star treatment all the way.

Last days in NYC

My darling is in the shower and I'm sitting and trying to figure out a way to not have to leave New York.

This morning we were up at about 8 and the weather was looking nice and sunny so we decided to do the last thing that was on our list of things to do - see the Statue of Liberty.

We subway-ed our way down to Wall Street and walked to the Staten Island Ferry terminal.  The ferry goes every half hour and is free - better than paying $20 to hang out with tourists I say.

The ride was very cold though, took about 20 minutes and we got relatively close to the Lady.  Close enough for some snaps.  We turned around pronto and decided to go shopping at Bloomingdale's. Not the fanciest of the department stores here, but it did offer us an 11% discount.  

Bojan hadn't been on any of my shopping expeditions yet, but he did enjoy Bloomy's and the sheer range of things it had on offer, even if it was a bit overwhelming.

I ended up with a pair of J Brand jeans that I'd wanted forever and ever but couldn't try anywhere in Australia and didn't want to buy off the net without trying on.  Bojan bought some red and navy Ralph Lauren socks and a "The Who" t-shirt (he's going through a rock t-shirt phase I think).  I saw my Chloe perfume lady again and she tried running after me - it sent a shiver down my spine! 

The rest of the day we spent at Bleecker Street- the Village really grew on us today.  It was wonderful and sunny! We had some cupcakes again, this time in the park and walked up and down.  I went into some of the stores, which were nice and very well priced.  I loved Intermix!


Tomorrow is our proper final day - we are definitely going skating again and we'll see about the rest!
